Mpatzos cheese P.D.O. is one of the oldest Greek cheese (the oldest hard cheese), and the preparation was started in parallel with the preparation of Feta cheese.

Its taste is pleasantly sour, slightly spicy and salty. Because of its low fat content is suitable for grilling. Consumed mainly in saganaki (fried Mpatzos with flour), fried with eggs (Mpatzos softens nicely without losing) or in various mezedes (appetizers) and main dishes.

The spicy taste of fried Mpatzos cheese cause to regard him as one of the best mezedes (companion) of ouzo or tsipouro (raki).
