What we now call Feta Cheese P.D.O. was known to ancient Greeks, at least since Homer's era, as there were several references to it in the Odyssey.
The myth has it that the cyclop Polyphemus was the first cheese manufacturer. Carrying the milk that he collected from his sheep in animal-skin bags, he realized, to his great surprise, that days later the milk had become a solid, savory and preservable mass.
In 1890 Dimitrios Christakis, using the milk of the mountain region of Edessa in the Pella Prefecture, created a small workshop cheese.
Sheep’s and goat’s milk is a mixture richer than cow’s milk in calcium, vitamin B and proteins.
Many things changed over the 120 years of history with the desire to produce quality and pure products to increase.
